Making Bread and Home-Made Croutons!

The last few weeks I've tackled on of my goals this year. Making home-made bread for us ... in our bread machine of course. I'm not going to pretend that I can actually have the patience to cook the bread in the oven ... the whole waiting for the bread to rise etc is CRAZY talk :) It actually worked out pretty good in the machine anyways :) I've posted the recipe below for those of you who want to give it a go ...

Whole Wheat Bread

1 1/3 cups milk
1/4 cup water
2 tbsp honey
4 tsps of butter or marg
2 cups whole wheat bread machine flour
2 cups whole wheat flour
1 tsp of salt
1 1/4 tsp bread machine yeast

* I don't use the two kinds of whole wheat flour ... I just use 4 cups of bread machine whole wheat flour.

Apparently you have to add them in this order for it to work properly. Who knew! Anyways ... give it a go. I have a whole wheat setting on my bread machine and that's the only button I push. Seems to work well. It takes a few hours so I've been making it right before I go to bed so it's going in the night and is ready the next morning. It's a bit heavier that regular store bought bread but it also doesn't have as much 'bad stuff' in it. I like how I can make it out of a few simple ingredients. I'd recommend getting a good bread knife to cut it so you can get thin slices but I actually like the thicker slices. Also ... don't leave it on the counter like you normally do other breads. Because there are no preservatives in it so your bread will go bad faster.

I've been cutting the bottom off and making croutons with the left over part because we don't eat it fast enough. I cut it into squares and put them in the freezer. Then when I made salad I put a little olive oil in a pan and added garlic and then heated them on low for a while when I was making the dinner. They were AWESOME!

Once I've become solid at this bread thing I'm going to try and make buns for veggie burgers but that's a summer project for sure :)
